Grape Crush Grape Overview
nformation contained in this report was supplied
by processors to fulfill the reporting requirements of 
Section 55601.5 of the Food and Agricultural Code.
The Final Grape Crush Report includes all grape 
tonnage crushed during the 2011 season.  Changes 
in tonnage, Brix and prices from the preliminary 
report to this final report were due to late reports and 
corrections to the original data.  Reporting errors 
by some processors have caused a change in some 
district/variety entries.
Details of the crushed tonnage, degrees Brix and 
weighted average prices were reported by grape type 
and variety, as well as by grape pricing districts.  The 
17 districts refer to the areas in which the grapes were 
grown as defined in the Administrative Code.  
Summary of Grape
Tonnages and Prices
The 2011 crush totaled 3,874,146 tons, down 3 
percent from the 2010 crush of 3,986,314 tons.  
Red wine varieties accounted for the largest share 
of all grapes crushed, at 1,920,036 tons, down 6 
percent from 2010.  The 2011 white wine variety 
crush totaled 1,426,905 tons, down 7 percent from 
2010.  Tons crushed of raisin type varieties totaled 
372,551, up 36 percent from 2010, and tons 
crushed of table type varieties totaled 154,653, up 
25 percent from 2010.  (See chart on page 82.)
Beginning with the 1999 season, the Grape Crush 
Report includes the total number of tons crushed 
for concentrate production.  In determining grape 
tonnage crushed for concentrate production, each 
processor was required to report the estimated 
equivalent tons of grapes crushed for grape 
concentrate.  For the 2011 season, this total was 
598,365 tons, approximately 15 percent of the 
2011 grape crush total.  This report provides only 
the aggregate figure for grapes crushed for 
concentrate production and does not include 
information by district, type, or variety. 
The 2011 average price of all varieties 
reached a record high of $591.69, up 9 
percent from 2010 and 3 percent above the 
previous record high set in 2009.  Average 
prices for the 2011 crop by type were as 
follows: red wine grapes, $706.77, up 13 
percent from 2010; white wine grapes, 
$542.41, up 8 percent from 2010; raisin 
grapes, $265.15, up 23 percent; and table 
grapes, $219.25, up 26 percent.

Leading Grape Varieties and Districts
In 2011, Chardonnay accounted for the largest 
percentage of the total crush volume with 14.4 
percent.  Cabernet Sauvignon accounted for 
the second leading percentage of crush with 
9.9 percent of the total crush.  The next eight 
highest percentages of grapes crushed included 
wine and raisin grape varieties.  Thompson 
Seedless, the leading raisin grape variety 
crushed for 2011, held 8.4 percent of the total.
District 13, (Madera, Fresno, Alpine, Mono, 
Inyo Counties; and Kings and Tulare Counties 
north of Nevada Avenue (Avenue 192)), had the 
largest share of the State’s crush, at 1,495,027 
tons.  The average price per ton in District 13 
was $326.76.

alifornia’s total livestock and livestock 
products cash receipts were $12.4 billion in 
2011, up over 25 percent from 2010.  Over 70 
percent of the change from 2010 was due to the 
increase in dairy products total value. Accounting 
for nearly 12 percent of total US livestock cash 
receipts, California displaced Iowa to rank second 
nationally, behind Texas. Dairy products remained 
the state’s leading commodity and accounted for 
19.4 percent of receipts for US dairy products.  
Cash receipts made cattle and calves the state’s 5th 
leading commodity in 2011.
The Golden State’s dairy industry 
began to recover in 2011 as the 
national and global economies 
strengthened. Milk prices improved 
in 2011, with the average price 
paid to producers at $18.52 per 
hundredweight. These higher prices 
helped with margins on the dairy 
and feed availability continued to 
play a role in the cost to produce 
milk. In June and July, CDFA held a 
hearing on proposed modifications 
to the Stabilization and Marketing 
Plans for Market Milk and amended 
the Class 4a and 4b pricing 
formulas effective September 
2011. Proposals to reform the dairy 
industry continued to circulate 
throughout the year on the national 
level to address the volatility in 
prices and supply management. 
Dairy processors also considered 
the impact of EU regulations on 
allowable somatic cell counts as 
negotiations between the USDA 
and EU stretched through the year 
before the implementation deadline 
in March 2012.
Cooperatives Working Together (CWT) helped 
member cooperatives with export sales totaling 
92.4 million pounds of cheese. CWT membership 
grew in 2011 to achieve 70 percent participation 
needed to move forward on the implementation of 
a voluntary production assessment to fund CWT 
export efforts.   
The state’s dairy industry is subject to myriad 
environmental regulations. In 2011 San Joaquin 
Valley dairy producers with 500 or more head had 
to comply with air quality regulations to reduce 
volatile organic compounds (VOCs).  Water

quality regulations regarding waste discharge were 
behind the success of the Central Valley Dairy 
Representative Monitoring Program (CVDRMP) 
membership growth as this nonprofit monitors 
well water across nine counties in a cost-sharing 
program. Other regions of the state worked to 
complete water quality plans and workshops 
were held to assist producers with compliance. 
Additionally, new dairy operations are subject 
to the comprehensive California Environmental 
Quality Act (CEQA). 
Since 1993, when it surpassed Wisconsin in milk 
production, California has been the nation's leading 
dairy state. Sales of milk and cream contributed 
$7.68 billion in 2011. Wisconsin, Idaho, New York, 
Pennsylvania and Idaho were the next leading 
states in total milk production. The top five dairy 
states accounted for over 53% of the total US 
dairy receipts. California 
ranked number-one in the 
U.S. in the production of fluid 
milk, butter and nonfat dry 
milk.  California was second 
in total cheese production 
behind Wisconsin, though 
the difference in production 
between these two states 
continued to decline. The state 
ranked 4th nationally in milk 
produced per cow per year. 
California’s dairies produced 
41.5 billion pounds of milk, 
accounting for over 21 percent 
of the nation’s milk supply.  
For the fifth year in a row, all 
12 months of 2011 recorded

Change
in milk production. Milk utilization continued 
the trends of 2010 with declines in fluid, soft and 
frozen products and increases in cheese. California 
milk going into cheese production increased 
to 43.1%, an increase of 13.8% from 2010. 
Mozzarella, which in recent years has accounted 
for over 50 percent of California cheese production, 
was responsible for most of the increase in cheese 
production in 2011.
According to the California Department of Food 
and Agriculture’s Dairy Statistics Branch, 33 
counties contributed to the state’s commercial milk 
production.  The top five milk-producing counties 
in California accounting for over 71 percent of 
the state’s total milk production were Tulare (27 
percent), Merced (14 percent), Kings (11 percent), 
Stanislaus (10 percent) and Kern (10 percent).  
Sales of fluid milk in California averaged 29 
percent whole milk, 39 percent reduced fat milk, 14 
percent low fat milk, 15 percent skim milk and 3 
percent half-and-half. 
Milk production per cow increased 1.8 percent to 
23,438 pounds. California’s total cheese production 
of 2.25 billion pounds was up nearly 2 percent 
from 2010.  United States cheese exports increased 
nearly 30 percent from 2010 to 224 thousand metric 
tons per the USDA Foreign Agricultural Service 
(FAS).  Butter exports increased by 10 percent to 
65 thousand metric tons.  Nonfat dry milk powder 
exports increased by nearly 14 percent to 436 
thousand metric tons. The recent US dairy inroads 
into Asian markets due to poor weather in New 
Zealand and Australia were eroded in 2011 as the 
herd, production, and feed supplies recovered with 
some Australian dairymen reporting the best yields 
in more than a decade. US suppliers continued to 
take advantage of the burgeoning Asian market 
demand for dairy products. According to FAS 
the volume of 2011’s US cheese exports to China 
and South Korea were up 217% and 183%, 
respectively. This contributed to the $4.82 billion 
of US dairy exports, up $1.1 billion from 2010. 
The percentage of annual change in all US dairy 
product export value for 2011 was up 30 percent, 
down from the prior year’s 63 percent increase.
California cash receipts for cattle and calves 
increased almost 37 percent from 2010.  Sales 
totaled $2.83 billion, compared with $2.07 
billion in 2010.  Receipts for hogs and pigs 
were up nearly 9 percent from the previous year.  
Aquaculture receipts were up 10 percent from 
2010.
California’s 2011 honey production, at 17.8 
million pounds, was 65 percent of the prior year.  
Producing colonies totaled 370 thousand, down 
10 percent from 2010.  The yield per colony 
averaged 48 pounds, compared to 67 pounds 
produced in 2010 and 33 pounds in 2009.  The 
average price per pound was 161 cents per 
pound.  Though average price per pound was up 
five cents from 2010, the low production pushed 
cash receipts for honey down to 67 percent of 
2010’s total.
The market for lambs and wool was very 
good in 2011 with exports significantly higher 
than the previous year.  The state’s poultry 
sector continued to be concerned with food 
safety, rising feed costs and stagnant domestic 
consumption.  Impacts from the 2008 Prevention 
of Farm Animal Cruelty Act to be implemented 
in 2015 are not yet apparent as there has not been 
a significant decline in egg production since the 
act was passed.
